1 c. white sugar
2 tablespoons of butter, melted
¾ tsp. Pure vanilla extract
3 whole eggs, beaten
1 (9-inch) unbaked or frozen dish pie crust
1 c. corn syrup
1 c. (heaping) chopped pecans
3 tbsp. Of brown sugar
Preheat the oven to 350°F
In a mixing dish, combine the sugar, brown sugar, salt, corn syrup, butter, eggs, and vanilla
In the bottom of the unbaked pie shell, sprinkle the chopped pecans
Over the top, pour the syrup mixture. Cover the top and crust with foil, lightly/gently. Bake the pie for 30 minutes. Remove the foil and bake for another 20 minutes, watching out not to burn the crust or pecans. When you remove the pie from the oven, it should not be too jiggly! Cover with foil and bake for a further 20 minutes or until set if it shakes a lot. This recipe appears to have a broad range of baking times. It takes 50 minutes sometimes, and 75 minutes other times!
Before serving, cool for at least 2 hours on a wire rack.
